At retail stores, consumers purchase the processed food products. This phase connects the supply chain directly to the end consumers. The purchased food is then taken home, prepared, and consumed, completing the cycle as it ends up on the consumer's plate.

Peel and cut the mangoes into small, uniform pieces, ensuring they are dry and free of moisture. Next, prepare a spice mix using ingredients like mustard seeds, fenugreek seeds, turmeric, chili powder, and salt. Heat mustard oil until smoking, then allow it to cool slightly before adding the spice mix. Combine the mango pieces with this spiced oil mixture in a sterilized jar, ensuring the mango pieces are completely submerged.

Seal the jar and let it sit in a cool, dark place for a few days to allow the flavors to meld together. Remember to shake the jar occasionally to distribute the flavors evenly. Once matured, your mango pickle will be ready to enjoy as a tangy accompaniment to rice, flatbreads, or as a flavorful addition to sandwiches and wraps.
